On February 21st at 11:00 AM at Montgomery Place Orchards located at 8 Davis Way in Red Hook, NY. John Kowalski will demonstrate how to preserve meat items including pancetta. The sausage items demonstrated are those that can be made at home with little or no special materials or equipment. There will be some hands-on activities in the production of the pancetta. Resources and recipes will also be available for those who want to explore the art of preserving meat and sausage making at home.

  • Enjoy a tasting of several cured meats
  • Go home with a pound of pancetta!Attendees will have the opportunity to purchase a signed copy of “The Art of Charcuterie” at the end of the session for those that are interested in owning this fabulous book.
